The Ansitz Dornach Patrick Uccelli winery was founded in 1788 by noble origins in Dornach, and is today looked after by the heirs of the Von Hausmann and von Gelmini families, who take care of the estate and vineyards every day. The company works under a regime of synergistic and biodynamic agriculture, much more than a simple agricultural technique and rather a true process of development in harmony with nature. Patrick Uccelli's wines are unique: a single, non-repeatable piece, as is also stated on the label. Gewürztraminer In Caso di Sete is a bottle made exclusively for the Signorvino brand. The grapes come from two 'mittlere and obere Steigleiten' vineyards on limestone soils. The wine ferments spontaneously in stainless steel with punching down three times a day, after which the skins are left to macerate for as long as possible. After racking, the wine matures for one year in large wooden barrels and one year in small wooden barrels. An intense ruby red in colour, the nose offers notes of red fruit with hints of cherry, blueberry and strawberry. The palate is bold, with savoury touches, silky tannins and a long and peppery finish. An ideal Pinot Noir to accompany all meat-based dishes, try it with sausage and broccoli bucatini.
