TASTING NOTES

Production

The Grawü winery has been certified organic since 2018. Vinification is natural, with no added oenological products, and sulphur dioxide is limited to 50 mg per litre. The stated aim is to bring the true essence of the grape to the glass, and its finest expression of terroir and organoleptic characteristics. For this reason, the grapes are left in contact with the fermenting must for varying lengths of time, depending on requirements. Chuormo Macerato is made from 100% Chardonnay grapes fermented on the skins, with a small percentage of Pinot Bianco, whose grapes are grown on limestone soil at 350 metres above sea level. Fermented on the skins for a month and aged in large acacia barrels for 18 months, the evolution of the winemaking process over a year defines the true soul of the vineyard. A Chuormo macerato is someone who does not want to live in a cage and has no need for preconceived notions.

Organoleptic Characteristics

Pale straw-yellow in colour, this Chardonnay is structured, not overly fragrant, sunny and approachable. Juiciness, freshness and soft elegance come to the fore on the palate.

THE WINERY

Grawu

The Grawu winery is a very young winery in Alto Adige, established out of the passion for vineyards and wine of Leila, an Italian, and Dominic, a German oenologist, from whose surname initials the name Grawu (Grasselli and Wurth) was born. A couple in life and work, they had already gained experience in many companies in the area before founding their own winery. The grapes made into wine come from organic cultivations belonging to third parties or from the vineyard in Val Venosta recently acquired by Leila and Dominic. Their commitment is geared towards maximum respect for the environment in which the vineyards grow, therefore being able to minimise any human intervention. In the winery, the sole use of indigenous yeasts results in a unique quest for authenticity. Grawu wines, South Tyrolean whites of excellence such as Pinot Grigio and Chardonnay, boasting great depth and immediacy, are faithful to the producers' aim of bringing the true and essential taste of the grape into the glass, allowing the history of a place and the people who care for it to be discovered on the palate.
