The Cave Mont Blanc winery is located on the slopes of Mont Blanc, precisely in Morgex in the Aosta Valley, on the left bank of the Dora Baltea river. The company was founded in 1983 and has since developed into a cooperative aimed at valorising the work of around one hundred members and winegrowers who, in conditions that are nothing short of heroic, tend to 120 hectares of vineyards located at an altitude between 900 and 1200 metres above sea level. The main grape variety in the production of Cave Mont Blanc is Prié Blanc, an indigenous white from which wines of surprising full flavour are obtained, whether produced with the Metodo Classico, dry white wines or late harvest. Dedicated to mountain guides, the Cuvée des Guides is made from 100% Prie Blanc, from vineyards at an altitude of over 1000 metres. After manual harvesting, the wine matures in stainless steel vats, followed by the entire second fermentation and resting phase on yeasts at an altitude of 2173 metres above sea level, where the unique aerial and climatic characteristics determine the quality of the perlage. The result is a Valdostan sparkling wine with an extreme and essential character, in which minerality and Alpine freshness stand out. Straw yellow in colour and enriched by a fine and persistent perlage, Cuvée des Guides reveals citrus notes and balsamic notes of mountain herbs on the nose, confirming them on the palate by being straight and taut, with a fresh finish and unique full flavour. Ideal to enjoy throughout a meal or for a special dinner, perfect as a pairing with typical Valdostan products such as fontina cheese and Arnad lard.
