Aquila Reale is Cesarini Sforza’s Cru. The grapes, harvested by hand into small containers in the first ten days of September, are gently pressed whole in a vertical Marmonier press, and only 50% of the must is selected for the Riserva Aquila. Fermentation takes place partly in oak barrels and partly in steel vats, where the wine rests for at least 7 months in contact with its lees. Malolactic fermentation occurs during this period. In late spring, the cuvée is blended in preparation for the bottling in early June, followed by over 100 months of ageing. It is then the days, months and years that bring about that evolutionary miracle of scents, aromas and sensations which, with a careful disgorging and a further 6 months of waiting before release, will be brought to life in the glass.
The straw-yellow colour with golden highlights reflects the freshness and ageing potential of this vintage. On the nose, the sweetness of the aromas evokes candied fruit, with notes of fine pastries and a slightly citrusy finish. During disgorging, the bottle is topped up with only a small amount of expedition syrup to preserve the typical character of the region from which the grapes originate. The excellent structure and persistence, supported by a pleasant acidity, give the sparkling wine great personality and elegance.
Its power is underpinned by great finesse and elegance. Ideal throughout a meal, it pairs beautifully with fine first courses. Excellent with both risotto and stuffed pasta, including seafood varieties.
To fully appreciate its style, Aquila Reale should be served at a temperature of 8–10°C.
