More than 20 years have passed since the Baglio di Pianetto winery was founded. These years have seen many harvests and wines, and have resulted in a mature production philosophy in the vineyard, with the aim of high-quality wine production with the perfect balance between tradition and innovation. The winery was founded in Gela, in the Province of Palermo, at an altitude of around 650 metres above sea level. The owners are true protagonists of high-quality winemaking, but oil and wheat production complement the enterprise of this fully organic farm. Terre Siciliane Ra'Is Essenza is a Sicilian raisin wine produced from a selection of Moscato grapes. The bunches of grapes are harvested by hand into crates for an initial selection process at two different harvesting times: The first harvest takes place before the grapes are completely technologically mature in order to ensure a higher acid concentration; the second allows natural drying on the vine, which along with pellicular maceration maximises the potential of this grape variety. The musts ferment at a low controlled temperature in small stainless steel tanks for around 40 to 60 days. The second harvest is allowed to rest on the skins in stainless steel and is then moved to fermentation tanks where it remains to mature. After ageing in stainless steel and barriques for a year, it undergoes further bottle ageing for another two years. Golden in colour with coppery reflections, notes of citrus, honey, and dates emerge on the nose. On the palate, it is full, lively, and reminiscent of almonds. It is recommended for an after-dinner drink and is ideal for pairing with a selection of cheeses.
