TASTING NOTES

Production

Negroamaro Tarentum comes from vineyards located in the province of Taranto. Vinification takes place in temperature-controlled stainless steel tanks, followed by malolactic fermentation which lends the wine softness and complexity. Ageing in steel preserves the freshness and fruity character of the Negroamaro.

Organoleptic Characteristics

The colour is an intense ruby red with violet hues. On the nose, there are aromas of ripe red fruit, such as cherry and plum, with spicy notes of black pepper and light herbaceous undertones. On the palate, it is elegant and smooth, with good acidity that lends balance and persistence.

Occasion and Pairing

Ideal for convivial dinners and special occasions, Barolo Le Teorie pairs perfectly with red meats, braised and roasted dishes, and game; traditional Apulian dishes; mature cheeses such as pecorino and caciocavallo; and spicy dishes such as meat rolls and dishes rich in Mediterranean flavours.

Serving Temperature

To fully appreciate its style, Lupicaia should be served at a temperature of 16–18°C.

Paololeo

The Paololeo winery was established in the heart of Salento, in Puglia, and from the start set itself the goal of producing high-quality wines to suit all tastes and budgets. An ambitious project that was passionately pursued, and which reaps its rewards today. The winery, in fact, is a real point of reference for winemaking in Puglia. Thanks to their commitment and passion, in fact, the founding family has been able to study the land and its most valuable characteristics to create Pugliese wines that best describe and enhance the territory. The vines stand on clay-limestone soil, alternating between sandier areas and others with emerging rock. These, combined with the mild climate typical of Salento, have made this area one of the most fertile and suitable for crops of all kinds. The microclimate of the Adriatic coast gives the grapes an exceptional quality, which can be found in the final product.
