Duca di Dolle is a young company situated in the hills of Conegliano Valdobbiadene. It produces a range of Proseccos which have already established themselves on the market thanks to their authentic characteristics. Prosecco Valdobbiadene Extra Dry Superiore Cartizze DOCG is a sparkling wine made exclusively from Glera grapes from 70-year-old vines on a single plot of land in Santo Stefano di Valdobbiadene. Cartizze Duca di Dolle, produced with the Charmat method, is vinified in stainless steel tanks and subjected to a second fermentation. An enjoyable sparkling wine with an intense aroma, it is the jewel in the company’s crown. An intense straw yellow with pronounced greenish reflections, this extra-dry version of Prosecco Superiore Cartizze is broad and inviting with floral notes including rose, pear, and ripe citrus. With a pleasant taste, full flavour and an aftertaste reminiscent of bread crusts, Prosecco Valdobbiadene DDD has a finish with a mineral note, thanks to the morainic soil typical of the small Cartizze plot. It can be married harmoniously with fish starters, delicate and light first courses, and second courses based on fish and white meats. Also perfect with desserts, its acid content makes it the ideal accompaniment for light crèmes, when the mineral note typical of the morainic soil can emerge.
