The Prosecco Valdobbiadene Extra Dry Superiore di Cartizze DOCG is a sparkling wine made exclusively from Glera grapes sourced from a single plot of land over 70 years old in the Santo Stefano di Valdobbiadene area. The Cartizze Duca di Dolle, produced using the Charmat method, is vinified in stainless steel and undergoes a second fermentation. Intense straw yellow with marked greenish hues, the Prosecco Superiore di Cartizze in the Extra Dry version is full-bodied and inviting, with floral notes, notably rose, pear and ripe citrus fruits. Pleasant on the palate, with excellent savouriness and a bread-crust aftertaste, Prosecco Valdobbiadene DDD reveals a mineral note on the finish, due to the morainic soil typical of the small Cartizze vineyard.
It pairs harmoniously with fish starters, delicate and light first courses, and main courses featuring fish and white meats. It is also perfect with desserts; its good acidity complements light creams, in which the mineral note typical of these morainic soils comes to the fore.
To fully appreciate its style, this wine should be served at a temperature of 10–12°C.
