Baffonero is a 100% Merlot from a vineyard of the same name located in Gavorrano, in the Tuscan Maremma. This vineyard, one of the first planted on the estate, covers 3.5 hectares with optimal exposure and soils rich in stone. Harvest takes place in the first half of September, with production limited to around 10,000 bottles. Fermentation takes place in concrete tanks, followed by malolactic fermentation.
Baffonero presents an intense ruby red colour. On the nose, it offers a complex bouquet that evolves over time: initially, notes of black fruits such as blackberry and blueberry emerge, accompanied by hints of vanilla. With aeration, aromas of tobacco, chocolate and subtle hints of coffee develop, giving the wine remarkable depth and persistence.
Thanks to its structure and complexity, Baffonero pairs perfectly with rich, flavourful dishes. Ideal with grilled red meats, braised meats, stews and mature cheeses. Its versatility also makes it well-suited to traditional Tuscan cuisine.
To fully appreciate its style, this wine should be served at a temperature of 16–18°C.
