Gavi is made from 100% Cortese grapes, whose must ferments and matures in stainless steel: the result is a fragrant, intense and harmonious wine. It comes from the highest designation of origin in winemaking terms, the DOCG Gavi del Piemonte, in Mombaruzzo in the province of Asti. The winemaking process involves the gentle crushing and pressing of the grapes, with the must immediately separated from the skins. This is followed by fermentation in stainless steel tanks at a controlled temperature of 12°C to a maximum of 14°C. Finally, the wine is aged on the lees in stainless steel tanks. On visual inspection, the wine appears straw-yellow in colour. The bouquet is rich, elegant, floral and fruity, with notes of lemon and mint. The palate is rich and fresh, harmonious, fragrant and endowed with excellent minerality. The finish is long and persistent.
A traditional Piedmontese wine, excellent as an aperitif, it pairs well with starters, seafood and fish dishes in general.
To fully appreciate its style, this wine should be served at a temperature of 12–14°C.
