Cottanera is a winery located in the stunning landscape of Mount Etna since the 1960s, when Francesco Cambria began to cultivate a vine that has grown here for thousands of years. Francesco's children and now his grandchildren have undertaken a thorough renewal of the winery and wine-making practices, making Cottanera a record holder on the Italian wine scene. Etna Bianco di Cottanera is made only with Carricante grapes, with their explosive minerality borne of the volcano. A wine made fresh, crisp and finely aromatic by the remarkable temperature ranges that characterise the area and vinification in stainless steel, which preserves the purity and immediacy of the sensations. In the glass it is pale yellow with light golden reflections, clear and decisive aromas of flowers, white-fleshed fruit and aromatic herbs, brought together by iodised nuances. In the mouth it is lively and beautifully clean, reminiscent of fruit and flowers, and it delights the palate with a fresh, salty minerality. Citrusy and sapid, it is excellent to drink young, while also having an interesting ageing potential. Ideal as an accompaniment to rich and spicy vegetarian dishes or fish-based preparations. Try it with raw fish or fried bluefish.
