The Champagne Grand Cru Blanc de Noirs Les Crayères is produced in the Montagne de Reims from Pinot Noir grapes sourced from Grand Cru-classified vineyards. The chalk-rich soils (“crayères”) impart great tension and minerality. Vinification involves fermentation in stainless steel and ageing on the lees according to the Méthode Champenoise. The dosage is very low, to preserve purity, structure and terroir character.
Intense golden yellow in colour with a fine, continuous perlage. On the nose, it reveals notes of ripe red fruits, citrus, apple and pear, accompanied by hints of brioche, dried fruit and mineral and chalky nuances. On the palate, it is structured and vibrant, with great freshness, savouriness and a long, elegant and precise finish.
A Champagne of great personality, ideal for fine dining. It pairs well with shellfish, premium fish, white meats and complex, flavourful dishes.
To fully appreciate its style, this wine should be served at a temperature of 8–10°C.
