Production

Chromatique is the Champagne Grand Cru Extra Brut Blanc de Blancs by Stéphane Regnault, a cuvée that expresses the elegance of the Chardonnay of the Côte des Blancs. It is born from 100% Chardonnay grapes from the prestigious Grand Cru terroirs of Le Mesnil-sur-Oger, processed with great attention to the purity of the fruit and the identity of the chalky soil. Winemaking takes place with fermentation partly in wood and partly in steel, with subsequent aging on the yeasts which gives complexity and harmony. The Extra Brut dosage maintains balance and great freshness.

Organoleptic Characteristics

On the nose it has an elegant and multifaceted profile, with notes of citrus, green apple and white fruit, accompanied by toasted notes, minerals and pastry notes. On the palate it is refined and vertical, with a pleasant creaminess balanced by a fresh salt tension and a characteristic chalky minerality. The ending is long, precise and persistent.

Occasion and Pairing

Perfect as a classy aperitif, it pairs beautifully with oysters, shellfish, seafood and fish tartare. Its structure allows you to accompany even delicate seafood dishes and light preparations based on white meats.

THE WINERY

The Maison of the Taittinger family was founded in 1932 by Pierre Taittinger, a first officer in the French cavalry and a great enthusiast of sparkling wines and gastronomy. Today, the Champagne house is led by the third generation with Pierre-Emmanuel and his sons Clovis and Vitalie Taittinger. The long tradition, the family's commitment and the continuous search for innovation have led Taittinger to be among the most relevant and historic wineries, identifying itself as a reference point in the Champagne region. The estate is located in the city of Reims and covers some 288 hectares of its own vineyards, divided into 34 different crus where Chardonnay is the most significant variety and the main component of all the blends, with a unique and recognisable character worldwide. Synonymous with excellence, it is characterised by underground cellars built from chalk quarries from the Gallo-Roman era in which Maison Taittinger Champagnes are slowly matured in contact with their yeasts.
