Production

Valentini’s Cerasuolo d’Abruzzo is made from hand-harvested Montepulciano grapes, vinified with short maceration and spontaneous fermentation in large oak barrels without temperature control or filtration, aged for 12 months in wood and subsequently one or two years in the bottle; It presents a brilliant cherry-pink hue and a refined bouquet of red fruits, undergrowth, chestnut and sweet spices, with savoury freshness and elegant structure, making it perfect with flavourful dishes such as tagliatelle with ragù, risotto with sausage, grilled white meats and cured meats.

Organoleptic Characteristics

Valentini’s Cerasuolo d’Abruzzo has an intense cherry-pink colour and offers enveloping aromas of raspberries, redcurrants, undergrowth and a delicate minerality; on the palate it is structured, fresh and savoury, with a fruity and persistent finish.

Occasion and Pairing

Perfect with hearty pasta dishes such as tagliatelle with meat sauce or risotto with sausage, grilled white meats, pizza and savoury dishes in general.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 14–16°C.

THE WINERY

Valentini

The noble Valentini family is of Spanish origin and resides in Loreto Aprutino, in the province of Pescara. Since 1600 it has owned the vast estate of the same name where wine, oil and wheat were produced. Today the Valentini winery is managed by Francesco Paolo, a man in love with his work and his wines, with the pleasure of cultivating his own vineyards. In the cellar everything takes place in a sustainable and natural way, without the use of chemical interventions and selected yeasts.
