TASTING NOTES

Production

The pure Nebbiolo grapes come from 60-year-old vines, which are hand-harvested with careful selection both in the vineyard and in the cellar. The grapes are then destemmed, and the must ferments spontaneously using indigenous yeasts. The wine is aged for 18 months in large barrels, without any filtration.

Organoleptic Characteristics

Barolo Piè Rupestris presents itself in the glass with an intense garnet red color, an austere nose whose initial compactness may be intimidating. Dominant aromas of licorice, dog rose, and violet are evident. As it evolves over time, its aromatic profile expands with hints of underbrush and leather. On the palate, it reveals a finely structured tannicity, with freshness and salinity.

Occasion and Pairing

It is very persistent and long on the finish, and is recommended to be paired with meat dishes or aged cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16-18°C.

Cappellano

At the Universal Exhibition in Paris (the same one where the Eiffel Tower was erected to commemorate the centenary of the French Revolution), Giovanni Cappellano's wine cellar won a bronze medal. Teobaldo took the helm of the company, changing it completely: much smaller dimensions and maximum attention to quality, according to precise guidelines.
