TASTING NOTES

The Barolo Otin Fiori Piè Rupestris is an ode to the territory of the Langhe, a Barolo that comes from one of the most renowned Cru of Serralunga d'Alba, or Gabutti. The 100% Nebbiolo grapes come from vines of 60 years, which are harvested manually with careful sorting in the vineyard and in the cellar, are then destemmed and then the must ferments spontaneously through indigenous yeasts. The aging of the wine takes place for 18 months in large cask, without any filtration. Barolo Piè Rupestris is presented to the glass with an intense garnet red color, an austere nose whose initial compactness could be intimidating. The nose is dominated by notes of licorice, rose hips and violet. Its evolution over time widens its aromatic profile with hints of undergrowth and leather. The mouthfeel reveals a very fine tannins, freshness and flavor. Very persistent and long on the finish, it is recommended in combination with meat dishes or mature cheeses.
