TASTING NOTES

Villa Calicantus is a small organic and biodynamic winery in the heart of Bardolino Classico, managed today by Chiara and Daniele who work 8 hectares of vineyards located on three of the best hills of the Classic Bardolino area. Chiar'Otto comes from a vineyard divided into six different parcels, contiguous to each other, within the territory of Bardolino. This Chiaretto is represented by Corvina, Molinara, Rondinella and Sangiovese grapes that are harvested by hand, with harvesting in small boxes and performing spontaneous alcoholic fermentation, conducted by indigenous yeasts in oak barrels. After racking, the wine is aged for about 6 months in oak barrels. Bottling is carried out without using filtration. Chiar'Otto is presented to the glass with a very intense pink dress, with fruity aromas of crunchy berries and soft floral notes, followed by brackish sensations of real sea breeze, combined with earthy hints of undergrowth. This Chiaretto is excellent in combination with the classic Veronese tastasal risotto. To fully appreciate its style, this wine should be served at a serving temperature of 10/12 ºC.
