Ageno is produced from 100% Malvasia di Candia Aromatica grapes, which undergo skin maceration for 4 months in stainless steel and/or concrete tanks. Fermentation and aging occur spontaneously with indigenous yeasts in 40hL wooden casks and bottles for the necessary duration, with no filtration and no addition of sulfur dioxide.
In the glass, it presents an amber color. The aromatic profile is very rich and complex, featuring notes of bitter orange peel, black tea, ripe yellow fruit, spicy sensations, hints of medicinal herbs, and resinous, balsamic reminders. Intense and structured, it offers a multifaceted, broad, and dense sip, leading to a very persistent finish marked by a pleasant tannic sensation.
Ageno is an autumn wine that pairs perfectly with a whole grain risotto with pumpkin, burrata, and anchovies. It’s meant to be shared with a new friend.
To fully appreciate its style, this wine should be served at a temperature of 14/16°C.
