The winery, dug beneath the hills of Aÿ, emphasises the charm of the house with a skilful mix of styles celebrating its precious heritage and its innovation. Everything is done on site, from the arrival of the grapes to their shipment all over the world. The pure spirit is identified in the micro-vinification in stainless steel tanks, combined with a minimalist dosage, respecting the integrity of the grapes and giving good aromatic complexity. The vertical organisation of the site, from the wine cellars to the roof terrace, makes it possible to limit manipulation and human intervention, while preserving the quality of Champagne. Chardonnay plays a central role in blends, giving delicacy and freshness to Ayala wines. Pinot Noir and Pinot Meunier accompany the Chardonnay, to sublimate it in the quest for balance.
