In Castiglione Falletto, in the heart of Barolo is the Cavallotto Estate with a family that since 1928 has cultivated the vineyards of the Bricco Boschis hill. A history of family and wine tradition that has matured over time. In 1946 they were among the first growers in the area to vinify their own grapes, creating in 1948 the first label of Barolo Cavallotto. Today the company is led by Laura, Giuseppe and Alfio, the fourth generation of Cavallotto born and raised in Bricco Boschis. In this estate are vinified only grapes owned, from which are obtained DOC and DOCG wines: Barolo, Dolcetto d'Alba, Barbera d'Alba, Langhe Nebbiolo, Langhe Freisa, Langhe Grign from Grignolino grapes, Langhe Chardonnay and Pinner from Pinot Noir. The winery covers 25 hectares of vineyards in a single body, all owned by the family and cultivated with an innovative system of organic viticulture. For the care of the soil, the Cavallotto family has chosen the technique of spontaneous grassing and the sub-row is also mowed by hand. The work in the vineyard is personally supervised by Alfio and Giuseppe, winemakers born in this Estate, in which they want to leave their personal mark in respect of the land and family tradition. All the grapes produced have been vinified and bottled under the Cavallotto brand since 1948, with malolactic fermentation by indigenous yeasts, without the need to inoculate bacteria. Choices and vinification techniques that have found their maximum expression in the enhancement of Bricco Boschis, a label recognized as an excellence of Barolo and Piedmont.
