An old family estate boasting 300 years of illustrious history, the Baron di Pauli estate has the honour of having held the title of "Imperial and Royal Austro-Hungarian court purveyor" of wine for years and was also highly regarded by the Tsars of St. Petersburg. Close to Lake Caldaro, it is an unavoidable junction on the Alto Adige Wine Road, with about 15 hectares of vineyards divided between Arzenhof - 10.5 - and Höfl Unterm Stein in Söll, near Termeno - 4.5. Here, the microclimate and soil conformation allow the grapes, both white and red, to produce the best yields: renowned products such as Gewürztraminer, Riesling, Pinot Blanc, Sauvignon Blanc, Merlot, Cabernet Sauvignon, and Lagrein come from the area. Arzenhof is terraced terrain near the lake, between 250 and 400 m above sea level, with a perfect Mediterranean climate for ripening. The Kalkofen, Carano and Arzio wines stand out here. Höfl Unterm Stein on the other hand, is clay-limestone, at altitudes of between 480 and 550 m, with temperatures dropping at night due to cool Alpine currents, ideal for Enosi, Exilissi and Exilissi Sell wines. The luxury of the fine Alto Adige white and red wines is achieved by a yield per hectare reduced to a minimum, in order to preserve the perfection of aromas and fragrances.
