Franciacorta Cuvée Prestige is the best expression of this territory, experiences that allow us to understand the raw material and its transformation processes. Cuvée Prestige consists of 82% Chardonnay, 16.5% Pinot Noir and 1.5% Pinot Blanc with a blend of 68% of base wines, 29% Reserve Wines of the previous harvest and 3% Noble Reserve Wines, all grapes from 197 vineyards cultivated in organic farming. The result of a careful selection of grapes and a skilful vinification through the Ca' del Bosco Method, Franciacorta Cuvée Prestige comes from grapes harvested and selected by hand and the musts of the base wines ferment in steel. Seven months of aging are necessary to clear the wine, to mature and to bring out the character of the vines of origin. The wines are then blended in the magical rite of the creation of Cuvée and only after aging on the lees of at least 2 years, this Franciacorta can express all its richness and identity. Dégorgement occurs in the absence of oxygen, using a unique system, designed and patented by Ca' del Bosco, avoiding oxidative shock and sulfite additions. This Cuvée has an intense and shining straw yellow color in the glass. Fine perlage, the nose shows delicate hints of white flowers and yellow pulp fruit, with notes of pastry and herbaceous. The palate reveals a mineral texture with present notes of exotic fruit. Excellent as an aperitif, Cuvée Prestige also goes perfectly with delicate appetizers of fish or vegetables, or with main courses of shellfish. To fully appreciate its style, this wine should be served at a serving temperature of 10/12 ºC.
