In Provaglio d’Iseo, between Mount Cognolo and the Torbiere del Serbino nature reserve, in the heart of Franciacorta, you will find the Bersi Serlini winery. The family bought it in 1886, after it spent about 700 years as the home of the Benedictine monks of Cluny who used to cultivate the land, with a strong passion for growing vines. What the Bersi Serlini family inherited from the previous 'tenants' was the Franciacorta Method, which uses noble grapes such as Chardonnay, Pinot Blanc and Pinot Noir and re-ferments them in the bottle. Today, management from the third generation maintains the commitment and prestige of the origins. Beneath the estate's 35 hectares are two underground wine cellars. In the vinification cellar, 12 metres underground, there is a room with walls made of clay, chalk and thyme that maintains the ideal temperature for production. The fermentation of Franciacorta DOCG takes place in stainless steel tanks and oak barriques. The maturation cellar, on the other hand, is excavated five metres, built in terracotta, barrel-vaulted and cross-vaulted. These are all features that make it possible to offer some of the best sparkling wines from Lombardy such as Brut, Blanc de Blancs and Satèn.
