TASTING NOTES

CAVIT, which stands for Cantina Viticoltori del Trentino, is one of Italy’s leading wineries. Established as a consortium of 11 of the most important winery cooperatives of Trentino, CAVIT coordinates the production and marketing programme, building on the work of more than 5,000 winemakers who contribute their grapes, which are sourced from the most suitable soils of the region. CAVIT’s offerings include all the main varieties of typical Trentino wines, but the company focuses most on the creation of Trento DOC. CAVIT’s Altemasi line thus comprises sparkling wines created using the Metodo Classico, respecting a strict production specification. With a confirmed production quantity of 10,000 bottles, Riserva Graal represents the peak of quality amongst Altemasi wines. This wine is created from 70% Chardonnay grapes and 30% Pinot Noir from the most suitable plots in Trentino, with glacial and volcanic soils at an altitude of between 500 and 600 metres above sea level. Following the first fermentation, which takes place in stainless steel tanks and barriques, the wine remains on the lees for more than 68 months, which gives this Metodo Classico wine a structure and complexity which make it one of the most significant and outstanding products of the Trento DOC designation. In the glass, Riserva Graal is an intense straw yellow with a fine and creamy perlage. On the nose, it explodes with scents of baked bread and sweet pastries followed by notes of Rennet apple and mountain herbs. On the palate, it is characterised by its elegance and consistency, having significant volume but remaining extremely dynamic and full-flavoured. It is an ideal sparkling wine for drinking on the occasion of a special meal and goes perfectly with a dish of raw red prawns, for example.
