TASTING NOTES

Nobile di Montepulciano Riserva is made up of 90% Sangiovese grapes, locally called Prugnolo Gentile, and 10% of complementary red grape varieties. Once harvested by hand, the grapes are vinified in stainless steel tanks at a controlled temperature and fermentation is carried out spontaneously. The maceration on the skins allows a perfect extraction of the polyphenolic substances, assisted by frequent pumping over in the initial stages of fermentation, interrupted by a delestage in the intermediate phase, and then resume in the final phase. The malolactic fermentation is completed in steel before winter. The aging in oak barrels takes place for 24 months. Before being placed on the market, Nobile di Montepulciano Riserva ages in bottle for the next 4 months. Tenuta Calimaia Nobile di Montepulciano has an intense ruby red color. The nose offers evident notes of red fruits: cherry at the beginning, followed by intense notes of aromatic herbs and spices, including sage, cardamom and pink pepper. On the nose the dark chocolate is accompanied by hints of licorice. The palate begins with its generous body, voluminous and fresh at the same time. The tannic texture is dense and free of harshness.
