TASTING NOTES

Questo Franciacorta Extra Brut rappresenta un’eccellenza nel panorama delle bollicine metodo classico italiano. È un assemblaggio di Chardonnay (50%) e Pinot Nero (50%). Dopo la fermentazione a temperatura controllata in vasche d’acciaio ed in parte (circa 20%) in carati di rovere, fa seguito, in primavera, il tiraggio con l’inizio di una lenta rifermentazione in bottiglia secondo il metodo tradizionale della Franciacorta. Le bottiglie restano in catasta per almeno 42 mesi garantendo l’inconfondibile bouquet dovuto al contatto ed all’autolisi dei lieviti. Dopo la sboccatura, con l’aggiunta di uno sciroppo di dosaggio secchissimo (solo 2 g/litro) il Franciacorta compie un ulteriore affinamento in cantina di qualche mese. Di paglierino luminoso illuminato da un finissimo perlage, molto consistente e continuo, può presentare in alcune annate note ramate derivanti dal Pinot Nero. Al naso si presentano subito note tostate e lampi minerali, poi frutti freschi, mandorle e crosta di pane. LA CANTINA

Ricci Curbastro

The production of the Ricci Curbastro family dates back centuries, with the strength of the traditions and secrets handed down from generation to generation. In addition to the companies in Lugo in the municipality of Romagna and Rontana in the municipality of Brisighella, the family also runs the estate of the same name. The latter is located in the area of Franciacorta, and is one of the most important in the production of high-quality Lombardy wines. A painstaking work full of commitment, behind which lies also a great study of the territory and the most modern techniques, to bring out the best not only of the terroir, but also of the raw material. The winery boasts a surface area of around thirty hectares, most of which are planted with vineyards and farmed according to the strict rules of “Consorzio vini Franciacorta”. Fermentation takes place in an underground wine cellar and as a result of its strategic location, it favours slow and steady maturation, leading to an absolutely spectacular end result.
