TASTING NOTES

This Franciacorta Extra Brut represents excellence in the panorama of Italian Metodo Classico sparkling wines. It is a blend of Chardonnay (50%) and Pinot Noir (50%). After fermentation at a controlled temperature in stainless steel tanks and partly (about 20%) in oak barrels, this is followed in spring by a slow second fermentation in the bottle according to the traditional Franciacorta method. The bottles remain in rack for at least 42 months, guaranteeing the unmistakable bouquet due to contact and autolysis of the lees. After disgorgement, with the addition of a very dry dosage syrup (only 2 g/litre), the Franciacorta undergoes further ageing in the wine cellar for a few months. A luminous straw yellow colour illuminated by a very fine, consistent and continuous perlage, in some vintages it may present copper notes deriving from Pinot Noir. On the nose it immediately shows roasted notes and flashes of minerals, then fresh fruit, almonds and bread crust. On the palate it is soft despite being extremely dry, fresh, with nice oiliness and consistent full flavour. Perfect for an aperitif with friends and as a pairing with fish and shellfish. THE WINERY

Ricci Curbastro

The production of the Ricci Curbastro family dates back centuries, with the strength of the traditions and secrets handed down from generation to generation. In addition to the companies in Lugo in the municipality of Romagna and Rontana in the municipality of Brisighella, the family also runs the estate of the same name. The latter is located in the area of Franciacorta, and is one of the most important in the production of high-quality Lombardy wines. A painstaking work full of commitment, behind which lies also a great study of the territory and the most modern techniques, to bring out the best not only of the terroir, but also of the raw material. The winery boasts a surface area of around thirty hectares, most of which are planted with vineyards and farmed according to the strict rules of “Consorzio vini Franciacorta”. Fermentation takes place in an underground wine cellar and as a result of its strategic location, it favours slow and steady maturation, leading to an absolutely spectacular end result.
