Tradition and passion, Terlano winery with its selection of white and red wines, best represents the characteristics of the territory. Sauvignon Quarz represents the elegance of the quartz inserts that make the volcanic porphyry of this territory shine and this Terlano wine honors its name. The Sauvignon grapes are harvested manually, the bunches are then gently pressed in whole clusters followed by a sfecciatura by natural sedimentation. It is then made a slow fermentation and aging for 9 months on fine lees, partly in large wooden barrels and partly in stainless steel drums. Blend three months before bottling. The glass has a sparkling greenish yellow color. The bouquet of this Sauvignon is exotic and captivating, with multiple fruity notes of mango, papaya, lime and red grapefruit, but also herbal aromas such as lemongrass, lemon balm, mint and green tea. There is also a hint of gooseberries and mineral flint. On the palate there is an interesting interplay between the fruity aromas and the delicately mineral notes, which blend into a harmonious full flavor that becomes decisive and persistent in the aftertaste. It goes very well with dishes such as oysters, salmon tartare or raw crustaceans, but also green apple risotto with grilled wild char fillet, steamed lobsters, roast lamb in herb crust with braised asparagus or aged goat cheese. To fully appreciate its style, this wine should be served at a serving temperature of 12/14 ºC.
