The wines produced by St. Paul’s wineries express the terroir from which they come; terroir is a concept that combines a wide range of factors such as climate, soil, exposure and various processes. St Pauls is one of the best wine-growing areas in Alto Adige; thanks to its slopes and hillsides, it offers grapes the perfect conditions for ripening. Pinot Bianco Plotzner is made from the monovarietal grape variety of the same name that is grown on morainic-limestone soils located above San Paolo at an elevation of about 550-650 metres above sea level. After harvesting, the grapes are transported to the winery where they are crushed. The wine then undergoes fermentation in wooden barrels, maturing on fine lees before ending with partial malolactic fermentation. Brilliant straw yellow in colour, ample and fruity on the nose, with hints of apricot and peach, floral notes and a slightly balsamic finish. Fruity, fresh and full flavoured on the palate with a good balance. Perfect for everyday drinking or paired with fish and shellfish.
