Without a large raw material you can not get a large distillate, that is why in the 4 hectares of property is grown most of the fruit used for production. Herbs that cannot be grown are harvested in the woods, where they grow spontaneously. Capovilla distillates are produced with spontaneous fermentations, mathematical precision distillations, long years of aging in steel, producing grappa of very high calibre. The distillate of Capovilla’s Williams pears comes from the fruits grown on the farm in strict biological condition. It is the definition with which the fruit is drawn to the nose that makes the difference: sweet and crunchy to the nose, in the mouth returns the sweetness of the fruit that is expressed in pure and absolute form.
