Erpacrife is a young winery specialised in producing Metodo Classico sparkling wine, located in Castagnole delle Lance, in the province of Asti. The company name is an acronym of four friends: Erik, Paolo, Cristian and Federico. The sons of wine producers, they met at school and decided to start producing a particular sparkling wine made with different grapes to those traditionally used for making sparkling wine. Metodo Classico Dosaggio Zero is made with Moscato, Cortese, Timorasso and Erbaluce grapes, harvested early so that they have more acidity, and part of the base wine is aged in wood. It rests on the lees for at least 24 months before being disgorged and is particular for not being dosed. A golden colour in the glass, it has a fine and persistent perlage. On the nose it expresses notes of ripe yellow fruit, orange peel and quince. On the palate it is fresh, savoury, full-bodied and with a fine quality. Excellent as an aperitif and throughout a meal, especially with delicate fish-based dishes.
