Farina, a family that has inherited a passion for wine and carrys it forward with conviction and love. 45 hectares of vineyards in the Valpolicella Classica area: Ten of these are owned by the winery itself and 35 are the property of historical winemakers that the Farina family sees as true partners in the production of their wines. Appassilento Rosso is a Veneto IGT wine that is the result of experimentation and research to find the desired blend. Fruit of the union of several successful red grape varieties: Corvina, Sauvignon and Merlot. The vinification and processing operations are very long and complex, hence the name Appassilento, which indicates the process conducted at a slow pace. A long resting period of the wine on the lees with periodic lees stirring, ageing first in stainless steel at a controlled temperature and subsequent maturation in Slavonian oak barrels for a couple of months lead to a firmly structured, full and smooth product. Intense ruby red with purple reflections. On the nose we recognise red fruit: black cherry, plum, blackberry and currants as well as dried red flowers, spices and black pepper. In the mouth, we perceive a nice body, beautiful intensity and tannin that caresses the palate perfectly integrated and balanced by an evident softness.
