TASTING NOTES

The Valpolicella Ripasso comes from the technique of the ripasso: a second fermentation of Valpolicella Classico on the still moist and sweet pomace of Amarone and Recioto. Brigaldara offers it in a classic style with the traditional assembly based on Corvina, Corvinone and Rondinella. The wine, fermented and stored in steel, spends five days on the pomace of Amarone that has just been racked, then continues in large barrels for the next 18 months to complete the aging. Valpolicella Superiore Ripasso is a beautiful bright red with transparent ruby hues. An immediate nose but with good complexity and territoriality, ripe cherry is in the foreground flanked by a subtle spicy note and more sweet nuances given by the pomace of Recioto. The palate has a good structure and volume, keeping a dynamic and flowing. Versatile wine that can combine both meat and first courses.
