TASTING NOTES

The Secondo Marco winery was founded in 2008 by Marco Speri, a member of the historic Speri family known in the land of Amarone. Located in Fumane, it enjoys an ideal climate for growing vines with slight temperature fluctuations due to the presence of Lake Garda, but in a soil rich in mineral salts. Secondo Marco Valpolicella Classico is made up of a blend of 70% Corvina, 15% Corvinone, 10% Rondinella and 5% other indigenous grapes. The grapes are carefully harvested by hand, and after destemming, the berries are softly pressed. The must ferments by macerating for about two weeks in contact with the skins. The wine matures for six months in cement vats before being transferred to 50-hectolitre barrels, where it remains to rest for a further six months. There is a further period of 3 months of ageing in glass before it is released. Valpolicella Classico di Secondo Marco is revealed to the eye with a ruby colour, characterised by a particular intensity. It is fruit that appears first on the nose, with mainly cherry notes, while on the finish it is surrounded by more spicy touches. On the palate, it has a medium body, with a fresh, savoury taste and good drinkability. A versatile label on the table, where in addition to classic pairings with white meats and earthy recipes, a good experiment would also be a pairing with stewed fish cooked with a tomato base. THE WINERY

Secondo Marco

The Secondo Marco winery is located in Fumane, in the heart of Valpolicella Classica. The area enjoys a perfect microclimate: a combination of winds and a cold-mild climate, particularly favourable for the development of vines. The soil is rich in mineral salts and is very variable in stratigraphy, even for vineyards in the same locality. This is combined with the variables of research in the winery to bring out all the full flavour and richness of the grape's aromas. The company comes from a family tradition, with the desire to change and offer something new but with the intention of leaving room for the new generation. The company, after years of continuous research and observation in the vineyard and soil, decided to be the first to adopt the modified Y-shaped pergola planting, altering the traditional cultivation method used for the vines of Valpolicella. The advantages were mainly to allow more light, ventilation and leaf structure for the vines. The bunches of grapes grow perfectly in a hanging manner, without touching the shoots and avoiding invasive maintenance with greater ease of harvesting during the harvest period.
