TASTING NOTES

Muffato della Sala is a sweet wine produced from a blend of Sauvignon Blanc, Grechetto, Traminer, Sèmillon and Riesling grapes. Already in the vineyard the bunches are attacked by Botrytis Cinerea, that is the Noble Rot that involves a higher concentration of sugars inside the berries and a reduction in water content. For this reason, we make a manual selection of the best bunches characterized by Noble Rot, neglecting the more acidic ones. A careful harvest and a meticulous and precise work in the cellar that allows to build a unique wine, among the most significant Italian sweet wines. After the grapes are transferred to the cellar, the grapes are further selected by manual sorting, followed by a light crushing without destemming, to better preserve the compactness of the bunch. After pressing, the must ferments for 18 days at a controlled temperature of 17 ºC. The wine obtained after alcoholic fermentation is transferred to French oak barrels where it matures for about 6 months before continuing to age in steel for a further 2 years. Muffled of the room has a bright and intense golden yellow color. The nose reveals delicate and elegant notes, dominated by sensations of ripe fruit such as apricot and citrus scents, accompanied by mineral notes on the finish. The palate confirms all its sweetness, almost liqueur and fresh. A great meditation wine, it enhances all its aromatic characteristics, also in combination with blue cheeses. Castello della Sala

On the slopes of the Umbrian Apennines where time seems to stand still, shrouded in an aura of charm and mystery, stands the Castello della Sala. This imposing medieval manor, built in 1350, now belongs to the Antinori family, which has been taking care of the production of one of the best Umbrian wines with ambition and care since 1979. Not far from the border with Tuscany and the iconic city of Orvieto, the 500 hectares of Antinori soils, rich in clay and minerals, are criss-crossed by the river Paglia and long rows of vines of different varieties: Chardonnay, Grechetto, Sauvignon Blanc, Pinot Blanc and many others. Under the guidance of agronomist Renzo Cotarella, the winery works tirelessly in the search for a white wine capable of expressing itself over the years and evolving over time, asserting itself through character and personality. In Castello della Sala's modern, recently updated wine cellar, each grape is treated with the utmost respect for the raw material, and then transferred to the estate's historic refining cellars, dating back to the 14th century, where the ageing process takes its course.
