TASTING NOTES

History, tradition and quality. These are the first words that come to mind when talking about Antinori, one of the oldest families of Tuscan and Italian wine. A short distance from the historic city of Orvieto is Castello della Sala, the family-owned Umbrian estate. A unique microclimate, characterised by excellent temperature fluctuations and a subsoil rich in clay seepage that allows the production of white wines with excellent structure and minerality. A perfect example is Muffato della Sala, a sweet wine made from a blend of Sauvignon Blanc, Grechetto, Traminer, Sèmillon and Riesling grapes. In the vineyard, the bunches of grapes are attacked by Botrytis Cinerea, or noble rot, which leads to a higher concentration of sugar substances inside the grapes and a reduction in water content. For this reason, manual selection of the best grapes distinguished by noble rot is carried out, with the more acidic ones being rejected. A careful grape harvest and meticulous, precise work in the wine cellar result in a unique wine, among the most significant Italian sweet wines. After transferring the grapes to the wine cellar, the bunches are further sorted by hand, followed by a light pressing without destemming, to better preserve the firmness of the bunch. After pressing, the must ferments for 18 days at a controlled temperature of 17°C. The wine obtained after alcoholic fermentation is transferred to French oak barriques where it matures for about 6 months before continuing its ageing in stainless steel for a further 2 years. Muffato della Sala has a bright and intense golden yellow colour. On the nose it reveals delicate and elegant notes, dominated by sensations of ripe fruit such as apricot and citrus hints, accompanied by mineral notes on the finish. Castello della Sala

On the slopes of the Umbrian Apennines where time seems to stand still, shrouded in an aura of charm and mystery, stands the Castello della Sala. This imposing medieval manor, built in 1350, now belongs to the Antinori family, which has been taking care of the production of one of the best Umbrian wines with ambition and care since 1979. Not far from the border with Tuscany and the iconic city of Orvieto, the 500 hectares of Antinori soils, rich in clay and minerals, are criss-crossed by the river Paglia and long rows of vines of different varieties: Chardonnay, Grechetto, Sauvignon Blanc, Pinot Blanc and many others. Under the guidance of agronomist Renzo Cotarella, the winery works tirelessly in the search for a white wine capable of expressing itself over the years and evolving over time, asserting itself through character and personality. In Castello della Sala's modern, recently updated wine cellar, each grape is treated with the utmost respect for the raw material, and then transferred to the estate's historic refining cellars, dating back to the 14th century, where the ageing process takes its course.
