TASTING NOTES

In 1985 was born the first bottle of Cervaro della Sala, a Umbrian white wine made from Chardonnay grapes with the addition of Grechetto. A wine thought to age over time was the first Italian white wine to undergo malolactic fermentation and aging in barrique for about 6 months, then resting 12 months in bottle, in the historic cellars of the Castle. Elegant and complex, the glass of Cervaro della Sala has an intense straw yellow color with golden shades. The nose reveals notes of tropical fruit and spices, followed by buttery and vanilla sensations. The palate is rich and mineral, distinguished by notes of hazelnut. Long and persistent has a high potential for aging. Wine for a great occasion, to share in a moment of conviviality. It offers the best of itself in combination with important cheeses or truffle preparations. To fully appreciate its style, this wine should be served at a serving temperature of 10/12 ºC. THE WINERY

Castello della Sala

On the slopes of the Umbrian Apennines where time seems to stand still, shrouded in an aura of charm and mystery, stands the Castello della Sala. This imposing medieval manor, built in 1350, now belongs to the Antinori family, which has been taking care of the production of one of the best Umbrian wines with ambition and care since 1979. Not far from the border with Tuscany and the iconic city of Orvieto, the 500 hectares of Antinori soils, rich in clay and minerals, are criss-crossed by the river Paglia and long rows of vines of different varieties: Chardonnay, Grechetto, Sauvignon Blanc, Pinot Blanc and many others. Under the guidance of agronomist Renzo Cotarella, the winery works tirelessly in the search for a white wine capable of expressing itself over the years and evolving over time, asserting itself through character and personality. In Castello della Sala's modern, recently updated wine cellar, each grape is treated with the utmost respect for the raw material, and then transferred to the estate's historic refining cellars, dating back to the 14th century, where the ageing process takes its course.
