SPECIFICATIONS

TASTING NOTES

Casamatta Rosso is a red wine produced with 100% Sangiovese grapes, coming from the youngest vineyards of the company raised in guyot and cordon rammed in the municipality of Fiesole. The fermentation of the must during vinification takes place in steel tanks spontaneously, thanks to the presence of indigenous yeasts. Aging continues in steel, where the wine lies for a few months until it is deemed ready to be bottled and marketed. It is presented to the eye with a typically ruby color, which contains slight reflections tending to violet. The nose reveals fruity and floral notes, which on the finish have slight aromas of aromatic herbs. The palate is light, slender and tasty with a satisfying and soft sip, thanks to the tannic component. Extremely versatile and can be combined in the kitchen, the Casamatta Rosso by Bibi Graetz goes wonderfully well with its earthy menu. THE WINERY

Bibi Graetz

Born into a family of artists, after his studies at the Academy of Fine Arts in Florence, Bibi Graetz took over the family vineyards around the castle of Vincigliata in the hills of Florence in 2000 and from a few barriques of Sangiovese, Colorino and Canaiolo his most iconic wines were born: Testamatta and Colore. The artist's background is clearly evident in the bottles where the labels are pictures painted by Bibi. Vineyards well over 50 years old and at altitude, the choice of indigenous vines and a natural approach in the winery are the founding elements of Bibi's vision of organic and sustainable viticulture. In 2019, Bibi Graetz's winery moved to the central square of Fiesole, inside Villa Aurora, a splendid early 19th-century hotel on the hill overlooking Florence and converted into a winery to house Testamatta and Colore, as well as Bibi and his family.
