Bibi Graetz, as an artist graduated from the Academy of Fine Arts. In love with the natural paradise of Tuscany, he decided in 2000 to abandon his first profession and devote himself completely to country life in the Fiesole hills surrounding the city of Florence. A rising star in the world of Tuscan wines, he has his own way of approaching viticulture: paying particular attention to native varieties and ancient vineyards, he has restored country plots in Rufina, Greve, Panzano and Isola del Giglio, to the point that he has now reached 50 hectares of vineyards. Wines from Bibi Graetz are true works of art that seek to extrapolate the authentic beauty of the area and immortalise it in the bottle. Casamatta Rosso is a red wine produced from 100% Sangiovese grapes, from the company’s younger vineyards grown using the guyot and spurred cordon method in the municipality of Fiesole. Fermentation of the must during vinification is done in stainless steel tanks spontaneously, thanks to the presence of native yeasts. Ageing continues in stainless steel, where the wine rests for a few months until it is ready to be bottled and released for sale. To the eye, it has a typically ruby colour, which contains slight reflections tending towards violet. On the nose, fruit and floral notes emerge, which have slight fragrances of aromatic herbs on the finish. On the mouth, it is light, simple and tasty with a satisfying and soft palate, thanks to the tannins. THE WINERY

Bibi Graetz

Born into a family of artists, after his studies at the Academy of Fine Arts in Florence, Bibi Graetz took over the family vineyards around the castle of Vincigliata in the hills of Florence in 2000 and from a few barriques of Sangiovese, Colorino and Canaiolo his most iconic wines were born: Testamatta and Colore. The artist's background is clearly evident in the bottles where the labels are pictures painted by Bibi. Vineyards well over 50 years old and at altitude, the choice of indigenous vines and a natural approach in the winery are the founding elements of Bibi's vision of organic and sustainable viticulture. In 2019, Bibi Graetz's winery moved to the central square of Fiesole, inside Villa Aurora, a splendid early 19th-century hotel on the hill overlooking Florence and converted into a winery to house Testamatta and Colore, as well as Bibi and his family.
