Grazie a importanti innovazioni in ambito viticolo ed enologico, con uno sguardo sempre orientato alla storia della vite e del vino, Allegrini riesce bottiglia dopo bottiglia, annata dopo annata, a valorizzare i suoi 150 ettari di vigneti che danno alla luce vini unici e di prestigio, risultato del raffinato stile aziendale e della vendemmia delle uve che crescono esclusivamente nei terreni di famiglia. Il Recioto Classico della Valpolicella Giovanni Allegrini è un vino dolce veneto prodotto con vitigni Corvina Veronese 40%, Corvinone 40%, Rondinella 15%, Oseleta 5% , fermentate in acciaio e successivamente affinate per 14 mesi in legno e ulteriori 10 mesi in bottiglia. Condivide con l’Amarone la tecnica dell’appassimento delle uve, ma se ne distingue per la naturale interruzione del processo fermentativo prima che tutti gli zuccheri siano trasformati in alcool. Vino dolce, di colore rosso rubino intenso, ha un bouquet speziato con note di frutta appassita e con lunga persistenza gustativa. Adatto anche per le occasioni piu importanti ed ottimo in abbinamento ad una selezione di formaggi.
