TASTING NOTES

The Rovellotti winery boasts a centuries-old and solid tradition of wine production, based on innovation and on increasingly facilitated winemaking methods and has a sustainable perspective. Ghemme Chioso dei Pomi from the Novara hills is made from 85% Nebbiolo and 15% Vespolina. After harvesting, the grapes are transported to the cellar where the alcoholic and subsequently malolactic fermentation takes place in steel tanks at a controlled temperature. It is aged first in steel tanks and subsequently 36 months in large Swiss oak barrels from the Jura and at least 9 months in the bottle. This wine has a garnet red colour. The nose is full and centred on hints of raspberry and violet. In the mouth it is dry, flavoursome and aromatic. Perfect for occasions such as Sunday lunch and paired with red meats. THE WINERY

Rovellotti

The Rovellotti winery, owned by the family that gives it its name, has been active in viticulture for more than six centuries. It has a solid, centuries-long tradition based on innovative methods and continuity. The wines in the winery are in fact made from the only indigenous varieties of the area, Nebbiolo, Vespolina, Vitigno Innominabile and Bonarda, and are aged in the historic cellars inside the Ricetto di Ghemme Castle. The location of the 25 hectares of vineyards, on the hills between the Po Valley and the Alps, creates the ideal microclimate for grapes with incredible aromatic properties. The soil, containing acidic components, lends itself well to the cultivation of berries that give rise to prized red Piedmontese wines such as Ghemme DOCG and its Riserva, Colline Novaresi DOC Nebbiolo and Colline Novaresi DOC Rosso. However, the characteristics of the Innominabile grape variety offer acidic and sweet grapes that are well suited to the production of sparkling and passito wines. But it does not stop there. Today, the winery is strongly committed to safeguarding native biodiversity. In fact, environmentally sustainable cultivation systems and processes that have the lowest impact on the local fauna and flora are always used.
