La Castellina is a very small and young company that stands on the hills of Lake Garda, in the province of Mantua. The morainic soils, the favourable climate, mitigated by the lake’s currents, and the numerous hours of sunshine ensure that the grapes reach optimal ripeness and are enriched with intense aromas. Frizzante Briosé La Castellina is made from Merlot and Marzemino grapes, it comes from a double fermentation: the first immediately after the harvest, in steel, the second in the bottle after bottling which took place in March. Bottled without the addition of sulphites. The colour in the glass is soft pink with hints of fresh fruit and bread. On the palate, it is quite dry, slightly citrusy but well balanced in the mouth with persistent and delicate bubbles. Bottling takes place without filtration, thus resulting in an accumulation of deposits and yeasts in the bottom of the bottle. It is interesting to serve it "with the lees" and with suspended yeasts for the more ambitious, or to obtain a cleaner wine it is advisable to serve it first in a carafe and then in a glass to avoid the suspension of the particles. Excellent as an aperitif or with delicate vegetable or fish-based appetizers.
