TASTING NOTES

Champagne Extra Brut Premiere Cuvée is a very personal interpretation of the Champagne region. Produced from top quality Chardonnay, Pinot Noir and Meunier grapes, it is the result of the most noble terroirs of the area. Extra Brut very little dosed, the maturation is prolonged until about 3 years on the lees followed by a minimum of 5 months after disgorgement. Straw gold color and very fine perlage. Nuances reveal the strong percentage of Chardonnay and the exclusive use of the first pressing. The fineness of the perlage is due to a noble raw material, to a perfectly controlled, cool and constant cellar temperature, and to a very long aging in bottle. The first aromas reveal the citrus of Chardonnay: green lemon, grapefruit. Then the aromas of red fruits appear: currant, raspberry, black cherry, characteristic of Pinot Noir. Letting it open again in the glass reveals a link with candied and exotic fruits of the Meunier. The palate is alive thanks to a low dosage that respects the authenticity of the wine. The nose is confirmed with the first flavors of citrus, almonds, toast. The long finish makes it perfect in combination with a fish risotto. Bruno Paillard

Slow and sustainable viticulture. The Maison Bruno Paillard was born from the founder's desire to create a different and pure perlage, with a fine and velvety perlage. The company works with respect for the land with a view to sustainable viticulture, with 30 hectares of property divided into 15 cru. In order to maintain finesse and elegance, Bruno Paillard uses only the first pressing of the grapes and vinification in the winery at a controlled temperature in stainless steel and second-use barriques. The Maison's Champagnes have higher than average levels of acidity, due to the high proportion of Chardonnay, which is why malolactic fermentation takes place spontaneously, reducing this basic acidity and resulting in a pure and elegant wine in a completely natural way, respecting the Maison's organic approach. Only the best vintages are Millesimato and the blend will be representative of the particularities of Millesimo.
