Champagne AYC18 is a Blanc de Noirs created from grapes that come half from the Grand Cru Verzenay and the remaining part from the parcels of Aÿ Bouzy, Louvois and Tauxières. Its production starts from the vins clairs of the vintage 2015 to which is added a share of Reserve Wines of previous years, chosen to accentuate the character and aromatic richness of the blend. The second fermentation takes place in the bottle according to the Champenoise method, with a period of aging on the lees of at least 3 years before the disgorgement. The Blanc de Noirs AYC18 from Bollinger is a Champagne that expresses the best characteristics of a true Blanc de Noirs, combining power and expressive elegance. The glass expresses a clear yellow color with golden reflections and a delicate but persistent perlage. The nose is very broad with hints of orange blossom, citrus peel, aromas of apple, small red berries and hints toasted and spicy. The palate is dynamic, with persistent hints that accompany towards a very long, savory and fresh finish. It is a Champagne of absolute refinement, excellent in accompaniment to very light fish dishes, or to a creamy and delicate dessert. To fully appreciate its style, this Champagne should be served at a serving temperature of 8/10 ºC.
