TASTING NOTES

The Novacella Abbey in Varna, a small town in Bolzano, is one of the oldest active wineries in the world. In 1177 the abbey’s vineyards were even recognised by Pope Alexander III. From the early 19th century until today, farmers have provided grapes to the Abbey where they are processed into excellent wines. Novacella Abbey provides a hint of history in every sip. The white wine vineyards in the Bressanone basin are some of the highest in Italy, at a height of 600 to 900 metres while their red wines are produced from Cornaliano and Bolzano vineyards at a height of around 420 metres above sea level. At the most extreme altitudes, cultivation is only possible with the right amount of sun exposure. Given the steep slopes, man-made dry stone walls were built to mitigate the steep gradient. This Trentino white wine "Alto Adige Valle Isarco Riesling Praepositus" is made from 100% Renano Riesling grapes from the Bressanone basin, grown at an altitude of 650 to 750 metres. It has a bright gold colour, strong mineral notes, as well as fruity and delicate candy notes. The mouthfeel is fruity, dynamic and persistent. Perfect for an aperitif with friends. THE WINERY

Abbazia di Novacella

Nowadays, there are few abbeys still actively involved in the production of wine, despite the wine-making traditions handed down from generation to generation in the respective areas. Novacella Abbey, not far from Bolzano, is one of them: it is a splendid establishment conducted with dedication and commitment by Augustinian monks, a winery capable of combining numbers and quality that few other wineries in Alto Adige are able to do. The altitude between 600 and 900 metres above sea level, and the cool climate and mineral-rich soils are ideal factors in the superb development of the typical aromas and full flavour of the white wines of the Eisack Valley, such as Sylvaner, Kerner, Müller Thurgau, Gewürztraminer and Veltliner. Red grape varieties on the other hand thrive in the Abbey's vineyards in the southernmost parts of the province: Lagrein, vinified at the Mariaheim estate, Pinot Noir, Kalterersee and Moscato Rosa from the Appiano estate. Wine has been produced at Novacella Abbey since 1142, and centuries of experience have been harmoniously combined with modern wine-making technologies. The great passion for tradition and the professionalism of the workers are values that contribute to giving the Abbey's wines the personality and purity that have always distinguished them and that make these Alto Adige wines a true delight for the palate. Wine production at Novacella Abbey is also important for the environment: in the 25 hectares of vineyards owned by the Abbey, and another 50 which are leased, chemical herbicides are banned. Furthermore, any treatments carried out on the plants are targeted and minimally invasive. In the winery, nothing is left to chance, starting with cleanliness and finishing with meticulously monitoring every single step of production. This is how the entire range of Novacella Abbey wines is created.
