Elena Walch è un'azienda vinicola di spicco dell'Alto Adige a conduzione famigliare, fiore all'occhiello della produzione vinicola italiana e rinomata a livello internazionale. Promotrice di qualità ed innovazione, Elena Walch ha contribuito a guidare la rivoluzione qualitativa altoatesina guadagnandosi così una grande considerazione locale ed internazionale. La filosofia aziendale è strettamente legata al suo terroir: il principio è che i vini debbano essere espressione unica del proprio terreno, del clima e del lavoro svolto in vigna, e che il vigneto debba essere lavorato secondo i principi della sostenibilità e come tali lasciati in eredità alle prossime generazioni. Il Riesling che qui viene coltivato, viene vendemmiato solitamente verso fine agosto a maturazione ottimale, subisce una pressatura soffice e fermenta in acciaio, procedendo ad un lungo contatto sui lieviti prima dell’imbottigliamento. Giallo paglierino chiaro, con sentori fruttati di pesca, fiori bianchi e spezie dolci e fresche, con un finale di pepe bianco ed eleganti note minerali. Al palato esplode una freschezza intensa, con una struttura minerale ed un’innata eleganza. Splendido se bevuto per l’aperitivo, ma incredibile in abbinamento a frutti di mare, piatti di pesce, molluschi e crostacei.
