Alpi Retiche Bianco is a wine produced in an alpine environment using Nebbiolo grapes vinified in white. The wine is based on a project linked to the vineyards that are cultivated on the sunny slopes of Valtellina and which, thanks to the south-southeast exposure and the altitude varying between 350 and 600 meters, allow slow ripening with much richer and more delicate aromas. The Nebbiolo, harvested manually in cask, is vinified white with soft pressing and immediate separation of the skins to avoid the color transition to the must. Fermentation is carried out in steel tanks at a controlled temperature of 18°C. After fermentation, the wine is racked and kept on fine lees for several months. The long lysis of the yeasts increases the aromatic complexity and at the same time softens the taste giving juiciness to the palate. The aging is done entirely in steel avoiding contact with oxygen: this way they develop tertiary aromas that make the wine more complex and able to age for a long time. The glass is a straw yellow color with light golden hues; delicate, clean perfume with fine fragrance of green apple, lemon, toasted bread, honey and white pulp fruit; dry and fresh flavor, with a pleasant mineral aftertaste and savory. Excellent as an aperitif, it goes well with raw fish, fried fish and vegetables, white meat and fresh cheeses. To fully appreciate the style, Bianco Alpi Retiche must be served at a serving temperature of 10/12°C.
