TASTING NOTES

Vulcaia Sauvignon is the fermented version in wood of the same Sauvignon wine called Vulcaia Fumé, which has obtained from the beginning a remarkable interest because of its fat and the powerful component of tropical fruit, coffee and citrus and aromatic floral notes. Sauvignon Fumé represents a production outside of styles and trend groups, a unique wine of its kind. Made from only Sauvignon Blanc grapes: once in the cellar the grapes are cooled in a cold room for a few hours and then destemmed. This is followed by a cold maceration on the skins for 3-6 hours. After a static decantation of 24 hours, the must carries out the alcoholic fermentation in French oak barriques with strong toasting. The maturation is prolonged for 6 months, during which periodic batonnage is carried out and then the wine is transferred to steel. In November, Vulcaia Fumé is bottled and remains in aging for a few months before being presented on the market. The glass has a straw yellow color and the nose is expressed with hints of coffee, spices and flower petals. The palate has tropical fruit, citrus and great aromatic complexity. Long and persistent finish. Recommended in combination with smoked salmon, caviar, bottarga and tempura. Perfect with traditional dishes such as tripe with sauce, Venetian liver or cod Vicenza. THE WINERY

Inama

A family that has been producing wines for over fifty years as their only business. The Inama company was founded in 1948 by Giuseppe Inama, who started working as an oenologist. Today, the winery is run by the third generation with sons Luca and Alessio. The initial project saw the sole objective of creating a single vision of the area, outside of trendy styles and groups. The company is located on the border between the municipalities of Vicenza and Verona, two very close but very different territories. Having produced wines for more than half a century has led us to develop the fundamental lines of our project: uniqueness of terroir, maximum expression of nature, constant improvement of the route. This area is particularly suited for the production of Soave Classico, because it consists of volcanic soil that gives the wine unique characteristics. Mineral and floral wines, with balance and elegance to fully correspond to the concept of wine above fashion. Today, Inama's estate covers about 30 hectares.
