A meeting of three generations. A family that has been producing wines for over fifty years as their only business. Inama farm aims to produce a variety of wines whose only common thread is that they reflect their place of origin and fully express the beauty of nature, disregarding the standards set by current trends. Located in San Bonifacio, on the border between the areas of Vicenza and Verona, Inama is renowned for the production of Soave Classico, a wine made with Garganega grapes, an exceptional variety in this volcanic area that gives the wine a mineral scent and a particular flavour. Vulcaia Sauvignon represents the Inama winery's idea of introducing the territory through an interpretation of Sauvignon, which, grown for the first time on this volcanic soil, has given rise to an entirely new version of the French variety. The vineyards for this wine are grown on volcanic soil of Monte Foscarino, a terroir that reveals fragrances and aromas that are difficult to trace to typical varietal notes. Once the grapes arrive at the winery, they are destemmed and processed according to the “non-reducing” technique, that is, without the addition of sulphur dioxide so that indigenous microflora have a chance to develop in the must. Pellicular maceration on the skins takes place followed by the decanting of the must and temperature-controlled fermentation in stainless steel. This is followed by ageing in stainless steel before bottling. Intense yellow colour, on the nose it reveals citrus notes and sweet flower notes. On the palate it is mineral with exotic fruit and citrus. On the finish it is long and persistent. It is ideal paired with traditional dishes such as eggs and asparagus, pan roasted rabbit with lemon zest, or with vegetables such as fresh spring onion and white and green asparagus.
