Tradition and family: these are the two key words that summarize the vision of the Monte Santoccio winery. The area, nestled between Lake Garda and the mountains of Lessinia, has a long tradition of red wines, and is famous especially for the passito made with red grapes, Recioto. Valpolicella Classico Superiore consists of a blend of Corvina 40%, Corvinone 30%, Rondinella 20%, Molinara 10% from the Valpolicella Classica area, in the municipality of Fumane. Valpolicella Superiore undergoes a fermentation with maceration on the skins for 15 days in steel tanks. It continues with a refinement for 12 months in steel for two thirds and 12 months in barrique for a third of the product. In the glass it has a ruby red color, with broad and lively aromas on the nose with distinct tones of fresh fruit. On the palate it is a fresh wine with a savory and fruity taste, with pleasant notes of black cherry. Valpolicella Superiore perfect in combination with tasty first courses, meats and medium-aged cheeses. To fully appreciate its style, this wine should be served at a serving temperature of 16/18 ºC.
