Trento 1673 Extra Brut Riserva embodies one of the best synthesis that the Classic Method can express and is the spokesman for the excellence of Cesarini Sforza. After a harvest of the Chardonnay grapes, a soft pressing is carried out in the vertical marble press. The must is then settled statically and the must is fermented only at a controlled temperature in stainless steel tanks. The aging on the lees lasts for about 6 months. Then the refermentation in the bottle and a permanence on the lees of 70 months. Fine and enveloping to the nose, the delicate immediate hints are prelude to more complex aromas in the glass in continuous evolution. The perlage is thick and shiny. Savory and rich on the palate, with a deep and persistent sip. Also as an aperitif, it pairs beautifully with sushi and sashimi. Ideal with a grane mixed fry dish. THE WINERY

Cesarini Sforza

Since the mid-seventies, when a small group of friends began the production of sparkling wine, the Cesarini Sforza winery represents one of the landmarks of the Classic Method from Trentino. In 1976 the first Cesarini Sforza sparkling wine was produced according to the Classic Method. In 1985 a bold Rosé Classic Method was produced from Pinot Noir grapes grown on the hills of the Cembra Valley and subsequently, thanks to the continuous wine and wine research, in 1986 the first Aquila Reale Reserve was created using only Chardonnay grapes grown above 500m. The vineyards are located in the most suitable areas of the appellation, from the elegant productions of the upper Valle di Cembra with the complex structure of the grapes of Meano and Cortesano, the balanced production of Sorni and the hills of Pressano with the characteristic vineyards located above the city of Trento and the hills of Besagno: land, altitudes (300-600 mt. s.l.m.) microclimates and different farming systems that allow you to achieve a unique style and great personality, expression of the quality of the brand.
