TASTING NOTES

The Government of Castellare was born from the idea of recovering a historical Tuscan practice of winemaking, already mentioned in the late eighteenth century, which consists in the addition of must or dried grapes to a wine that has just finished a fermentation, triggering a new one that lasts until spring, making the wine soft and pleasing. This practice allows the Government of Castellare to be ready to leave the winery in spring, after about 6 months of aging, of which 4 months in cement tanks and 2 months in bottle. Made from Sangiovese with the addition of Canaiolo and Malvasia Nera, this wine is the entry level product of the winery, being in its own way extremely versatile and fascinating. With a clear ruby red color, the nose is characterized by clear hints of flowers and fresh fruit that we find at the tasting in a context of great roundness and drinkability. Perfect as a daily wine, the Government is a Tuscan red wine ideal in combination with first courses and delicate meats. Try it also slightly fresh.
