Paololeo was destined to produce wine from the Masseria Monticello family vineyards. What he probably did not expect at the beginning, in the early nineties, was probably to become one of the most important realities of Salento. One of the most beautiful areas of southern Italy, is constantly whipped by both the warm winds of sirocco and the cold ones of tramontana, creating major thermal changes that contribute to the quality and aromatic variety of grapes produced here. Located right in the heart of the DOC Salice Salentino, more precisely in the town of San Donati, the Paololeo winery can count on 25 hectares of vineyards and a family run run with passion led by the heir of the same name, Paololeo. The style is youthful, like the managers, while respecting the tradition and its traditional grapes. Primitivo di Manduria Passo del Cardinale is a red wine from Puglia based on Primitivo. This grape has the peculiarity of being early enough to guarantee a second production of grapes, used to balance the acidity of fruits very loaded with sugar. The grapes for the Passo del Cardinale are fermented for 8-10 days at a controlled temperature while the total period of maceration is 15 days. The wine ages for 3 months in American wood barriques and 6 months in steel.The glass has an intense ruby red color; the aroma is an explosion of black fruits, especially plum; the finish is spicy and licorice. The mouthfeel is very full-bodied but well balanced, with subtle and velvety tannins. Perfect wine for everyday life, we recommend it in combination with grilled red meat or roast. To fully appreciate its style, this wine should be served at a serving temperature of 14/16 ºC.
