TASTING NOTES

Paololeo was destined to produce wine from the Masseria Monticello family vineyards. What he probably did not expect at the beginning, in the early nineties, was probably to become one of the most important realities of Salento. One of the most beautiful areas of southern Italy, is constantly whipped by both the warm winds of sirocco and the cold ones of tramontana, creating major thermal changes that contribute to the quality and aromatic variety of grapes produced here. Located right in the heart of the DOC Salice Salentino, more precisely in the town of San Donati, the Paololeo winery can count on 25 hectares of vineyards and a family run run with passion led by the heir of the same name, Paololeo. Negroamaro Orfeo is a red wine from Puglia based on Negroamaro, the main grape of Salento. The grapes are harvested at dawn to preserve their freshness and aroma. They are fermented for 8-10 days at a controlled temperature while the total period of maceration is 15 days. Maturation takes place for 12 months in American wood barriques and 3 months in bottle. The glass has an intense ruby red; the bouquet is spicy and rich in dark fruits, with a finish of spices and cocoa. The mouthfeel is very full-bodied but well balanced, with subtle and velvety tannins. Perfect wine for everyday life, we recommend it in combination with grilled red meat or roast. The Paololeo winery was established in the heart of Salento, in Puglia, and from the start set itself the goal of producing high-quality wines to suit all tastes and budgets. An ambitious project that was passionately pursued, and which reaps its rewards today. The winery, in fact, is a real point of reference for winemaking in Puglia. Thanks to their commitment and passion, in fact, the founding family has been able to study the land and its most valuable characteristics to create Pugliese wines that best describe and enhance the territory. The vines stand on clay-limestone soil, alternating between sandier areas and others with emerging rock. These, combined with the mild climate typical of Salento, have made this area one of the most fertile and suitable for crops of all kinds. The microclimate of the Adriatic coast gives the grapes an exceptional quality, which can be found in the final product.
