Since the 1960s, love for one's roots, culture as a continuous exchange, constant research, curiosity, the willingness to innovate and modernise and the passion for one's work are the values that have sustained the Cotarella family company. In the 80s, the wine-making brothers Renzo and Riccardo founded the Falesco winery in Montefiascone to recover the ancient vines, then paying particular attention also to the international one they found in the area between Lazio and Umbria, a favourable soil and climatic situation structured on volcanic hills. With the aim of obtaining a wine that could best represent the great potential of the Lazio vineyard, the Cotarella brothers focused their attention on the Syrah variety. The individual care of the plants, with particular attention paid to the containment of production, has allowed grapes with great balance to be obtained. Tellus was created in 2008, a fresh and fragrant Syrah, obtained from grapes grown in full respect of the environment and processed in the winery following the most advanced oenological technologies; a dynamic scenario in which the roots travel with the future to discover and enhance all the potential of the land. It is produced from grapes harvested in mid-September, immediately after harvesting and subsequent pressing, the grapes are sent to a cold pre-maceration phase for 4 or 5 days to best enhance the natural characteristic of freshness and fragrance of the fruit. After fermentation in stainless steel, the wine is placed in wood where the malolactic fermentation also takes place. The colour is intense with violet reflections. On the nose, hints of fresh fruit, cherry, sweet spicy notes stand out that blend with great balance and elegance with those of vanilla given by the wood. From the very first sip, it is enveloping, silky, with soft tannins; the finish is rich and persistent. The perfect pairing is with grilled meat, lamb and game, but it gains a special note as a pairing with aged and smoked cheeses.
